Sweet Potato & Black Bean Burrito Bowls

Sweet Potato & Black Bean Burrito Bowls

adapted from a Kayla Itsines recipe in her recipe book (linked here)

ingredients:
– 1 brown onion
– 2 cloves garlic, crushed
– 1/2 tsp ground chilli powder
– 1/2 tsp sweet paprika
– 1/.4 tsp dried oregano
– 2 tsp dried rosemary
– 1 can crushed tomatoes (400g)
– 2 large sweet potatoes, chopped into 1.5cm cubes
– 1 can black beans (400g)

for the guacamole:
– 1 avocado
– 1/4 cup pomegranate seeds
– lime juice
– 1/2 red onion, finely chopped
– fresh or dried coriander

to serve:
– wholemeal wraps
– baby spinach and rocket OR kale

to make:
– 
finely chop the onion and garlic and cook in a large pan with a little olive oil (or water)
– once the onion mix is soft, add chilli powder, paprika, oregano and rosemary and stir until the mix is fragrant
– add the crushed tomatoes and stir to mix
– once the mixture is heated, add the chopped sweet potato and bring to the boil
– simmer with the lid on until the potato is cooked through
– while the potato is cooking, put the avocado, lime juice, red onion and coriander and smash together
– stir through the pomegranate into the guacamole
– when the potato mix is ready, take off the heat and add the black beans
– put the mix on top a bed of kale (or other greens) and top with guacamole and a toasted wrap
