Summer Pancakes (with caramelised banana and mango)

My ideal Sunday brekkie for 1

makes: 1 serve (around 2 pancakes)

– 1/2 cup wholemeal flour
– 1/4 cup quick oats
– 2 tbsp LSA
– 1tsp cinnamon
– 1tbsp desiccated coconut
– 2 tbsp maple syrup
–  3/4 cup almond milk
– dash of vanilla essence
– sliced banana
– 1/2 mango
– coconut flakes
– fresh banana slices
– maple syrup

– combine flour, oats, LSA, cinnamon and coconut with a wooden spoon in a large mixing bowl
– add the maple syrup and vanilla and slowly stir in almond milk until the mixture is pancake-y
– spray a frypan with olive or coconut oil and once it’s heated, put about 3 tablespoons of batter in
– while the first side is cooking, place 5-6 banana slices on the top before you flip it (this will caramelise the banana while the pancake is cooking through!)
– cook for about a minute each side or until cooked through
– top with fresh banana slices, mango, coconut flakes and maple syrup
– eat and enjoy!
